The legend on E dock

His name is Bruce, and he is our neighbor. His fishing prowress has spawned many imitators on E dock, but no equals. Bruce has singlehandedly fed our family with striped bass and bluefish the past several weeks. V is in awe of him. (Note: after this week, we need to take a a little break from fish due to health advisory warnings. But for the occasional indulgence…) Here is a recent catch, with recipe below.

Striped bass recipe

One striped bass, cleaned, scaled and gutted

Several stalks scallions, thinly sliced into 2 inch strips

Ginger, sliced thinly

Soy sauce

Pinch of sugar

Canola oil

Aluminum foil

1. Preheat the grill on hi

2. Make several cuts into the fish on one side and stuff in some scallion and ginger. Flip the fish over and do the same. Rub some salt into the cavity of the fish and stuff some more more scallion and ginger. Wrap the fish in aluminum foil.

3. Underneath the package of fish, place another piece of aluminum foil with some water (to help steam the fish).

4. Place onto the top rack of the grill (the grill we used had the warming rack at the top), cook for 20 minutes. Check for doneness.

5. Once fish is cooked, remove from the grill. Drizzle a small bit of soy sauce and oil over the body and add sprinkle with a pinch of sugar. Serve it up and enjoy.
